Ok , I managed to translate the site but I realized that the item circled in red (see down)is in English only when it is in the categories of new products , featured products ..
But when the product is in its menu of belonging is translated ..
Why?

@Marco Sbolgi: Because this text come from modules (modules only support English now), not come from component. So you also need translate modules to Italian language.

There are a plugin for translate the modules language?

In my menu there are three structures categoria..la first, second and third ..
If I want to see in the first all products owned by the third category (which are about 20 third categories ) how can I do ?
But of course when I go on a third of the categories I see only the product connected to that third - class and not even the first ..
